
The Chef.
Chef Kenji Mori grew up outside Fukuoka, Japan, surrounded by the sounds and rituals of his father’s neighborhood ramen shop. It was there that he learned ramen was never meant to be complicated—it was meant to be warm, immediate, and personal.
At twenty, Kenji moved to New York, working in kitchens across Manhattan and Brooklyn before returning to Japan to study ramen more deeply in Fukuoka, Tokyo, and Sapporo.
When he came back to New York, he began shaping a style of ramen that reflected both worlds: rooted in Japanese technique but influenced by the energy, diversity, and attitude of the city.
At KŌYU, every bowl is made with intention—from house-made noodles to carefully layered broths and seasonal ingredients.
For Kenji, ramen isn't about recreating Japan in New York; it's about creating something that could only exist here.
